Oven symbols are composed rather than memorised. The square outline is the cavity, a line at the top or bottom is the element that will be on, and a fan in the middle means the air is being moved — so an unfamiliar symbol can be decomposed rather than looked up.
Oven control symbols are built from a small set of components: a square outline for the oven cavity, a horizontal line at the top or bottom edge for the element on that side, a fan glyph for forced convection, and a zigzag for the grill.
What a given programme actually does is in the appliance's own instructions. The symbol names the function; the manufacturer decides how it behaves.

Composable, which is the useful part. A square with a line top and bottom is both elements — conventional baking; add a fan and it is fan-assisted; a fan alone with a circle is true fan cooking heated by a ring element round the fan itself.
Fan cooking runs cooler for the same result, conventionally about twenty degrees below a stated conventional temperature, because moving air transfers heat faster. Recipes generally state one or the other and not both.
